Runner-up in the fifth season of ‘Top Chef,’ Stefan Richter showed off his skills under pressure at the National Restaurant Association Restaurant, Hotel-Motel Show’s World Culinary Showcase. After all of his ingredients were lost on their way to the Show, Richter managed to create three amazing dishes, which were later judged by his audience.
“I was scavenging, I was everywhere,” says Stefan. “Richard Blais left asparagus and I went to all the booths on the floor.”
Stefan’s dishes included a ham and Mexican cheese quesadilla, a summer tomato salad with shallots, avocado, shaved garlic and balsamic and a rack of lamb with asparagus, fingerling potatoes and horseradish foam. All ingredients were found on the NRA’s diverse Show floor.
Stefan Richter also discussed how American food has improved over the past eight years and believes California’s produce can’t be beat.
“I wouldn’t go back to Europe if you paid me $50 million,” he says. “America’s food has improved greatly. I look at how all the chefs are using fresh, organic ingredients and it’s wonderful.”
Richter also takes the stage today to battle it out with Corby Kummer and Luther Lowe at the education session Debate: Are Yelp Reviews a Good or Bad Thing?
